Degree and credit rule
The programme's admission page sets these rules: [1]
- Degree: an Italian degree in Food Science and Technology (class L-26) or an equivalent foreign qualification, such as Food Engineering. Graduates in biotechnology, biological sciences, agricultural science and technology, agri-food and forestry, chemical science and technology, pharmaceutical sciences, environmental and natural sciences, or animal production can also apply if they meet the credit rule. Other STEM degrees can be considered with the approval of the degree board.
- Credits for a degree from outside Italy: at least 60 ECTS in general, organic and analytical chemistry; agronomy and animal production; biology and biochemistry; unit operations; food processing; food engineering; and food microbiology.

The 2025/26 course regulations set a stricter credit rule: at least 80 CFU in listed science, agricultural and food sectors, with at least 20 CFU in food science and technology and food microbiology. We check your transcript against the rule in force for your intake. [2]
What this means for your transcript
Italian CFU and the credits on a foreign transcript are not the same unit, and the board looks at the subjects you studied, not just your total. As a guide, based on the rules above:
- Usually a fit: a B.Tech in Food Technology, Food Engineering or Dairy Technology, or a B.Sc. in Food Science and Technology, which normally covers food chemistry, unit operations, food processing and food microbiology.
- Check carefully: a B.Sc. in Microbiology, Biotechnology, Biochemistry, Agriculture or Chemistry, or a B.Pharm, which can reach 60 ECTS through chemistry, biology and biochemistry but often has little food processing or food engineering.
- Often short: a B.Tech in Computer Science or Mechanical Engineering, a BCA, B.Com, BBA or BA, which rarely include the listed food and science subjects.

Assessment test
The course is open access, with no cap on places, but every applicant must pass an assessment test of personal preparation before enrolling: [1][2]
- 30 multiple-choice questions on food biochemistry and processing, unit operations, food microbiology, analytical techniques, economics, food law, quality in agri-business, and primary animal and plant production;
- at least 18 correct answers to pass;
- retakes allowed until the official enrolment deadline;
- held on campus in Teramo, or online for international graduates, who are contacted after their qualification is pre-assessed.

About the programme
Food Science and Technology is a two-year master's degree (laurea magistrale, class LM-70) worth 120 ECTS, taught in English by the Department of Bioscience and Technology for Food, Agriculture and Environment at Campus Aurelio Saliceti in Teramo. How the programme is taught
Teaching combines lectures with work in the department's food labs, where students also run their thesis experiments. The second year includes a 6 ECTS traineeship and a 22 ECTS master's project. The department has more than 300 agreements with food companies and research centres for traineeships, some supported by Erasmus+ grants. An optional double degree curriculum with Chulalongkorn University in Bangkok, running since 2020/21, leads to both universities' degrees.
